Friday night was a hot date with Elisa and some other teachers at the gym!! YEA LADIES! The rest of the weekend was dedicated to my good friend…SQUASH! I guess I was just in the mood. 🙂
I attempted a new recipe, Butternut Squash pizza crust made with whole wheat flour. It was pretty gooood!! I’ll be tweaking the recipe and posting it soon, for you all. I topped it with nonfat cottage cheese, onions, zucchini and turkey pepperoni.
The next Squash deliciousness was roasted Butternut Squash with olive oil, S&P and a sprinkle of cinnamon. Under that pile of zucchini is a homemade turkey burger. The boyfriend ate a regular burger with some penne, think he’s all squashed out. AM I?… NEVER! He’s also rocking the No Shave November look for charity. 🙂
Finally, during food prep I made one of my oldies but goodies. Jamie Eason’s Pumpkin Protein Bars never fail. I always add a little more pumpkin for moisture. This time I topped them with some homemade pumpkin seeds. I only use half the recipe in an 8×8 pan so nothing goes to waste. They’re perishable so they stay in the fridge!!
I squeezed in a shoulder and abs workout early Sunday morning. Hoping for the knee to feel better to get some legs in this week. Overall, it was a wonderfully relaxing and delicious weekend!
